Dum Aalu

Ingredients

12 Baby Potatoes boiled and peeled

3 Tomatoes and 2 green chilli  made into Puree

1 onion puree

1 Tspn Ginger and Garlic Paste

1 Dry Red chilli

2 Tbsp oil/ Ghee ( To make Gravy )

Salt (as per taste)

chilli Powder (as per taste)

1 Tspn Turmeric Powder

1 Tspn Garam Masala

1 Tspn Cumin Powder

1 Cup Oil ( To deep fry potato )

1 pinch Asafoetida

1 Toothpick / fork

chopped coriander

Preparation

With the help of toothpick or fork prick the potato for about 4 to 5  times in different places. In a pan take 1 cup oil once the oil heats add the pricked potatoes and fry it until golden brown in color and take it out in a plate. In the same pan take 2 Tbsp oil/ Ghee  once the oil is hot add asafoetida, cumin powder, dry red chilli,Ginger garlic paste and saute for 2mints after that add onion puree and fry it for another 2 mins then add tomato and green chilli puree,red chilli powder, Turmeric Powder and Salt and fry it for about 5 to 10 minutes  then add the fried potato and mix it well. Add little water if necessary  and let it boil for another 5 to 7 mints.

Garnish with coriander and serve it hot with any kind of Indian Bread or Rice.
