Potato with cheese

If anyone is looking for healthy recipe for kids lunchbox/ break time, then you can give this recipe a try. Everyone of us tries some or other tricks at our kids to intake greens :p The main ingredients of this recipe is potato and cheese. This is the simplest form you can make, with very less ingredients or whatever is available in your kitchen but will  soon post with other green vegetables like spinach, peas and carrot.  Normally these are deep fried, but I have tried the way we make patty’s so less oil and more healthy 🙂 You can also use the Pan cake ball  / Paniyaram pan.

INGREDIENTS

Boiled and mashed potatoes- 3

Semolina- 1 Tbsp

Salt & Pepper as per taste

Pinch of  Turmeric and Chili powder

Lemon Juice / Amchoor ( Mango Powder )

Cheese slices or Processed Cheese.

Oil to fry.

METHOD

This is especially for kids, so its not very spicy. You can adjust it according to your preferences.

Add all the ingredients except Cheese and oil in mashed potatoes and mix it well and adjust the spices if necessary.  Break the cheese slices into small pieces and keep it aside.

Now take a small portion of  potato mixture and roll it into ball and flatten it in your palm, then add little pieces of cheese and close it by bringing the sides togther and once again roll it into a ball / flatten it like patty depending on which pan your gonna use.  Repeat the same with rest of the mixture.

Heat the pan and then place the patty/ Potato balls in the pan and then add little oil. Once its golden brown from one side flip it and allow the other side also to turn golden brown in color. Remove it from the pan and serve them with ketchup ,Amchur ki chutney , Imili chutney| tamarind chutney , Garlic dip .

Toast with Paneer and cheese

Strictly for cheese Lovers… 😉

 

INGREDIENTS

1 cup crumbled Cottage cheese ( Paneer)

1/4 cup approx of very finely chopped red onions

2 green chilies, chopped finely (or as per taste)

2 cloves of garlic, finely minced (or as per taste)

1/2 cup fresh mozzarella, crumbled (or use grated mozzarella)

1/2 cup tomatoes, finely chopped

1 inch ginger grated

Few springs of coriander, chopped

salt to taste

Black Pepper

Oregano

Chili Flakes ( Optional )

Bread slices

Ketchup

Grated Mozzarella or emmental cheese

In a pan heat the 1 tsp oil, then add all the ingredients together except the cheese. Saute until soft( taste and Change the seasoning according to your taste). Once they are soft remove from heat and add fresh mozzarella along with coriander ( cilantro). Mix until well mixed.

Take the bread slices and spread the ketchup on each slice on one side and sprinkle the grated mozzarella cheese and then add the mixture on the top and then finally grated Mozzarella ( or emmental cheese) on the top one more time.

Place the slices in the baking tray, lined with baking paper and put the tray inside the preheated oven until the cheese has melted and the bread looks golden brown from the corners.

Remove it from the oven and serve it hot.. 🙂

Hungarian Cheese Puff

INGREDIENTS

250 gram all purpose flour

3.5 gram yeast. ( I used instant, If your using dry yeast please see the Note below at the end of the recipe to see how to use the dry yeast. )

75 ml of warm water

1/2  Tbsp salt

0.25 cup of plain yogurt

125 gram grated cheese ( mixture of smoked cheese and cheddar cheese )

METHOD

Mix the flour,salt and butter together then add the yogurt and mix it once again and now finally add the yeast and knead the for about 10 to 15 mins. First, the dough will be very sticky and wet but just keep kneading the dough.  If even after 15 mins of kneading the dough hasn’t come together then probably you can add more flour and once the dough is ready, cover the dough with cloth and set it aside for 30 mins in warm place.

After 30 mins roll the dough out and bring the left side and right side to the center then the bottom side to the center and the upper side on the top of bottom side thus forming a rectangle shape. Now once again cover it with the cloth and let it rest for 30 mins. Now after 30 mins roll the dough again and  repeat the same technique of folding and then  roll the dough one more time and then cut it into circles with the help of cookie cutter. Place the circles ( Puff ) on the baking sheet in a tray.. Grease the top of the puff then sprinkle some salt, pepper and cheese and bake it in the oven for 15 mins at 190 degree Celsius. Once they cool down serve they are ready to serve.

Note:

If you are using dry yeast, then in that case soak the dry active yeast in 2 to 3 tbsp lukewarm water and add little amount of sugar in it and keep it aside for 10 mins and yeast will be activated. And then you can add the required amount of yeast to dough.

Flammkuchen ( Brother of Pizza ;) )

Eat it as a snack or add a green salad or make it sweet .This recipe is from an area in France that is at the border of Germany and used to belong to Germany. The dish is popular in both countries and there are as many variations as families that make it.

INGREDIENTS

For Dough

500 g flour

7 g salt

7 g active dried yeast

320 g warm water

1 Tbsp  olive oil

For Toppings

Olives

220 grams of  sour cream

200 grams of yogurt

Black pepper ( as per taste)

Thyme

Nutmeg Powder

1/2 bowl of chopped Capsicum

Chili Flakes ( optional )

Mix all the ingredients of dough and knead it well for 10 mins until you get soft, stretchy and velvety dough. Now place the dough in a big bowl and cover it and rest it for 2 to  4 hours at room temperature.( you have to take big bowl since the dough will double as you have the yeast.) or you can store it overnight in the fridge and  use it next day.

Preheat the oven for 30 mins at max temperature before baking. In the mean while divide the dough into small equal size balls.. and let it rest for another 10 mins on the counter. After 10 mins take one of the dough ball and roll it in the circle or oval shape as you like.. the thickness should be about 2-3 mm and then transfer them to baking sheet. Repeat the same with the rest of the dough balls.

In a bowl mix fresh cream and yogurt in a small bowl, add the nutmeg, salt and pepper and mix well.

Now evenly and generously spread the mixture of fresh cream and yogurt on the base leave  a small border around the edge so that it will turn into golden brown in color, then add rest of the toppings.  Do the same on the other base as well. ( If you are going to bake only one at a time then add the toppings mixture one by one otherwise it will become soggy ) Now put it in the oven and bake at 180 degree for about 12 mins or until the edges are golden brown in color and the base is crisp.   Serve immediately once it’s ready .

Note:

Once you have kneaded the dough and if the dough is still sticking to your hand add little flour and then mix it..

Traditionally chili flakes are not added in this recipe… but Since I like spicy I added it.. 🙂 and also I have roasted for about 15 mins.. which made it really crisp…

 

Papdi Chaat With Cheese Twist

Ingredients

8 papdi
1 Tomato chopped
1 Onion chopped
1 Green chilli chopped
grated cheese
Oregano
Black pepper
salt
chilli powder

Chat masala

2-3 tsp olive oil

Method

In a bowl mix all the ingredients well except papadi and cheese. You can make changes in spices as per your taste.In a microwave safe plate place all the papadi and top it with mixture of onion and tomato. Then on the top sprinkle some cheese and place it in the microwave for about 20 to 25 seconds.
And serve it.
