Soup with Basic Ingredients

INGREDIENTS

1 carrot diced

1 medium capsicum diced

2 -3 baby corn diced

1 Tsp garlic powder ( can use fresh crushed garlic also)

1 Tbsp pepper ( adjust accordingly)

1 Tbsp oil

1-2 Tbsp soya sauce

1-2 Tbsp vinegar

2 Tsp Chinese spice

Water or vegetable stalk as required

METHOD

In a pan add oil once its hot add carrot, saute it for a minute followed by baby corn and all veggies. Later add garlic powder, pepper, Chinese spice give a stir. Add vinegar and soya sauce followed by water as required. Let it boil for 10 minutes . Your soup is ready serve with fresh  baked stuffed bread, bun or garlic bread. To find recipe of bread and bun click here. You can add cornflour to make it thick. I like without cornflour so did not add. You can serve without veggies as clear soup also.

Toast with Paneer and cheese

Strictly for cheese Lovers… 😉

 

INGREDIENTS

1 cup crumbled Cottage cheese ( Paneer)

1/4 cup approx of very finely chopped red onions

2 green chilies, chopped finely (or as per taste)

2 cloves of garlic, finely minced (or as per taste)

1/2 cup fresh mozzarella, crumbled (or use grated mozzarella)

1/2 cup tomatoes, finely chopped

1 inch ginger grated

Few springs of coriander, chopped

salt to taste

Black Pepper

Oregano

Chili Flakes ( Optional )

Bread slices

Ketchup

Grated Mozzarella or emmental cheese

In a pan heat the 1 tsp oil, then add all the ingredients together except the cheese. Saute until soft( taste and Change the seasoning according to your taste). Once they are soft remove from heat and add fresh mozzarella along with coriander ( cilantro). Mix until well mixed.

Take the bread slices and spread the ketchup on each slice on one side and sprinkle the grated mozzarella cheese and then add the mixture on the top and then finally grated Mozzarella ( or emmental cheese) on the top one more time.

Place the slices in the baking tray, lined with baking paper and put the tray inside the preheated oven until the cheese has melted and the bread looks golden brown from the corners.

Remove it from the oven and serve it hot.. 🙂

Daal Dhokli

Today we have come up with the recipe named  Daal Dhokli. This recipe is a traditional recipe of Rajasthan, Gujarat & Maharashtra. Anyone who comes from this state can easily relate to this recipe. This is a one pot meal and very easy for mommy’s also who have fussy kids who don’t like Moong Daal. I have one at my home who is really moody 😉  with this recipe protein intake would be there as well fiber.  This is made with different lentil in different states like in Rajasthan it’s made from Moong daal and in Gujarat from Toor daal. There is no extra effort required and very little of groceries. Serve the kids without tadka if they don’t like spicy its yummy even without tadka and specially very healthy.

All you need to do is just add dollop of Ghee and lemon juice. Also you can add raw chopped onion and coriander ( mint) along with Papad, Khichya. Some people just add very little sugar to it.. I haven’t tried it though…

INGREDIENTS

For Daal

3/4 cup  Mooṅg Daal ( split Chilka daal/ Green lentil ) washed

1 to 2 Tbsp Channa Daal (split Bengal gram) washed

Salt as per your taste(in cooker)

1/4 tsp Chilli powder (in cooker)

1/2 Tbsp turmeric ( in cooker)

1/4  Tbsp Cumin (optional)(in cooker)

For Dhokli

1 and 1/2 cup Wheat Flour

1  Tsp Salt (as per your taste)

1 Tbsp Red chili powder

1/2 Tsp Turmeric Powder

1/2 Tsp Cumin

1 Tbsp Oil/Ghee (Clarified Butter)

For Tempering

3-4 Tbsp Ghee (Clarified Butter)

Pinch Asafoetida (hing)

2-3 Laung (Clove)

1 Tej pata (Bay leaf)

1 to 2 Dry red chili

1 Tsp ginger grated or chopped

1 Tsp garlic paste (or grated)

1 to 2 green chili ( Chopped)

1 Tsp Cumin (jeera)

1/4 cup chopped Mint leaves

Red Chili powder (as per your taste)

1/2 tsp Garam masala ( optional)

1/2 Onion chopped (optional)

METHOD

Making of Daal Dhokli

Take all the ingredients mention under dhokli and mix them together and knead it into soft dough and let it rest  for 10 mins. In the mean while in a Cooker add  the washed daal (lentils) and then add about 2-3 cups of water and allow it to boil on  medium flame(adjust the water accordingly). Now take the dough and knead it once again and roll it out and cut them in diamond shape or square, how ever you like.. Once you cut take each piece and put it in the cooker when you see the water is boiling along with lentil ( Daal). Then add chilli powder ,turmeric powder and cumin. Once you have added all close the cooker and allow for atleast 4 to 5 whistles to come. Then bring it down from the gas (stove) and allow the pressure to go away and then open it. Just stir the daal dhokli.( If you feel its too thick add little water )

Tempering

Now in a pan take Ghee. Once its hot add asafoetida, clove,bay leaf,dry red chili, ginger-garlic paste saute for 2 mins ( and if you are adding onion saute it along with ginger garlic) then add cumin, green chili, chili powder after a second just add 1 tsp of water so that red chili powder doesn’t get burnt and then add chopped mint leaf. Let it fry for 2 -3 second. Now add the tempering to the already prepared Daal Dhokli and boil it for 5 mins and then serve it hot with chopped onion , lemon juice and papad or Khichiya

Tips:

  • I personally recommend using of Ghee while tempering because it actually gives nice flavour…
  • If you think it would be spicy for kids you can always serve it without tempering but make sure to add little ghee and  before you serve 🙂
  • You can also replace the Mung Daal with Toor Daal ( Split Yellow Pigion peas)

Sugar Choco Treat

INGREDIENTS

For the Stuffing

Dark Chocolate (or) Compound Chocolate. (Shredded/ Grated into small pieces )

To Coat

Powdered Sugar or Confectioner sugar

For the wrapper

There are various methods which you can use for Wrapper.

Lot of time on Hands then use below mentioned ingredients to make wrapper at home…

2 cups all purpose flour

1 tbsp ghee/oil (optional)

Water to knead (as required )

otherwise you can also use store bought spring roll/ Wanton wrapper or store bought Pizza dough ( to skip kneading part) 😉

METHOD

To make Wrapper

Homemade: Mix all the ingredients mentioned  under the wrapper together in a bowl and then add enough water to make it into dough. Knead it until the dough is smooth. Then roll the Dough and cut small rectangular pieces or the shape you like and fill them and close them with the paste.( I used mixture of water and all purpose flour to stick it)on all the side and stick the sides.. so that the filling doesn’t leak out. Repeat the same with rest of the wrapper and fry them in oil. Until light brown in color.

Keep the wrapper at least on counter for 30 mins before starting to use them. Take a wrapper and place the  filling in the center and apply the paste ( I used mixture of water and all purpose flour to stick it) on all the side and roll them and stick the sides.. so that the filling doesn’t leak out. Repeat the same with rest of the wrapper and fry them in oil. Until light brown in color.
Using Pizza Dough:
You have to keep it out of the freezer to bring it to normal temperature and then dust the surface little with the flour and then roll the pizza dough little ( may be just once so that wrapper is not to thick nor too thin )  then cut them into  small square shape ( or any desired shape you like ) and place the filling in it and close them in traingle shape (In order it to avoid it to open during baking after closing just press the edges and mark them with from behind the spoon). Repeat the same with the rest of the dough and place each into the baking tray. ( Grease the baking tray before you place the stuffed dough or use butter paper instead). Bake it at 250 degree until light brown in color.
Final Step
Once  you have fried/baked take the powdered sugar and sprinkle it all over the pieces and then serve them.
Note:
Make sure the chocolate doesn’t have sharp edges.

One Spice Aloo Recipe

INGREDIENTS

For making all in one spice( 200 grams )

coriander seeds 1 Tbsp

Pepper 1 Tbsp

Carom seeds 1 Tbsp ( optional )

Mustard seeds 1 Tbsp

salt

Dry red chilly seeds 1 Tbsp

Dry red chilly 8  (or according to your taste )

To Make Aloo 

All in one spice mixture masala 2 Tbsp (or) add more if you like more spicy

Oil to fry 1 Tbsp

Garlic(chopped) 1 Teaspoons

Onion(chopped) 1

Chopped Potatoes  2

Turmeric powder 2 pinch

METHOD

Heat the pan and dry roast the  coriander seeds, pepper, carom seeds, mustard seeds then add dry red chilly seeds and saute for a min then transfer it to blender. In the same pan now add the dry red chili and dry roast it and add it to the blender containing other dry roasted ingredients. once the spices have cooled down grind them coarsely.

Now the final step of preparation:

In the same pan add oil, once the oil is hot add the garlic and chopped onions and saute for about 2 mins then add turmeric powder,  potato  & salt and saute until the potatoes are semi soft. once the potatoes are semi soft or half cooked add the Grinded spice of about 2 Tbsp and mix it well so that potatoes are covered in spice completely. Now close it with the lid on a medium low flame and mixing it occasionally. once the potatoes are cooked switch off the gas and serve it hot with daal rice or chapati.

Note:  you can store the grinded masala in a container and use it whenever you want.
