Namkeen Sponge Cake (Makki kae khaman)

This recipe is originally from Gujarat. Normally its made from Besan ( Gram flour ) and few other variations.  I just wanted to make something yummy but yet healthy so thought of trying it with maize flour as I also wanted to use Maize flour.   Though I had to try using trial and error methods but then yes 😀 it finally came out well just the way I wanted Healthy, yummy and fluffy.

INGREDIENTS

For Khaman

1 cup Makki atta (maize flour)

1 cup curd

1/2 cup water

1/2 tbsp oil in flour

1/4 tsp sugar

1/2 tbsp eno ( blue one)  or any other fruit salt (not flavoured one)

Salt as per your taste

Tempering

2-3 Tbsp oil

1/4 tsp mustard seed (rai)

5-8 curry leaf

3-4 slit green chili

1/4 tsp cumin (jeera)

METHOD

Making Khaman

Mix all the above ingredient mentioned under to make Khaman except oil and eno ( see that no lumps are formed). Later add oil and mix it well and keep it aside for 10-15 minutes. Meanwhile grease a tray and pour water in a pan or cooker in which ever you are going to cook ( I cooked it in kaḍai with a ring, even in cooker its cooked the same way as in Kadai/pan ) You can use the same techniques which I used to cooked Khichu or Khariya.  Add eno to the wet ingredients and give a nice twist so that eno get mixed properly. Now pour the wet mixture in the greased tray and place it in boiling water . Cover it and let it cook for 20 minutes. After 20 minutes insert tooth pick and check if it comes out clean then its ready to serve or else let stay for another 5 minutes.

Khaman Dhokla

Tempering

Meanwhile in a pan add oil once oil get heat add mustard seed once it splutter add curry leaf and green chili and switch off the flame . Cut the cake as required shape now add tempering and serve it with Imli (Tamarind) chutney  or dry mango Powder chutney / ketchup /Green Chutney etc.,

1 inch ginger grated

Few springs of coriander, chopped

Black Pepper

Oregano

Chili Flakes ( Optional )

For the wrapper

There are various methods which you can use for Wrapper.

Lot of time on Hands then use below mentioned ingredients to make wrapper at home…

2 cups all purpose flour

Water to knead (as required )

otherwise you can also use store bought spring roll/ Wanton wrapper or store bought Pizza dough ( to skip kneading part) 😉

To make Wrapper

Homemade: Mix all the ingredients mentioned  under the wrapper together in a bowl and then add enough water to make it into dough. Knead it until the dough is smooth.

Now take the dough and divide it into 2 to 3 pieces and roll one pieces  out into a large rectangle. Cut the bigger rolled rectangle into smaller rectangle enough for the fillings to be filled and closed. The thickness should be medium – not too thin nor too thick (too thin will break after u fill it up with stuffing, too thick will not make a crunchy snack, but will be more soft) Now take one rectangle and add the stuffing in shorter end of the rectangle making sure to leave few inches near the edges to close it. Roll it twice, bring the edges of the filling together (So that the filling doesn’t come out during frying), and then continue rolling until you reach the end. Use a water mixed with flour mixture to bind the dough. and apply flour water mixture at the end, and continue to roll it till the end.
Repeat the same with the rest of the dough. ( Roll to bigger rectangle –> then cut into smaller rectangles–> and then add the stuffing’s and roll it ). Now fry these up in hot oil until crisp and reddish brown.
Using Spring roll wrapper:
Keep the wrapper at least on counter for 30 mins before starting to use them. Take a wrapper and place the  filling in the center and apply the paste ( I used mixture of water and all purpose flour to stick it) on all the side and roll them and stick the sides.. so that the filling doesn’t leak out. Repeat the same with rest of the wrapper and fry them in oil. Until light brown in color and serve them hot with Ketchup.

Everything is same just the Wrapper 🙂

Different Wrapper Same taste 😉

Using Pizza Dough:
Missed taking the photos will Post them soon..
You have to keep it out of the freezer to bring it to normal temperature and then dust the surface little with the flour and then roll the pizza dough little ( may be just once so that wrapper is not to thick nor too thin )  then cut them in big rectangle shape so that when you fill them with filling and close it its in cylindrical shape. Preheat the oven then place the filled rolls in the greased tray ( you can also place a baking sheet on the tray and then the rolls) and bake it 250 degree until light brown in color. Then using a pizza cutter cut them in the circles.

2 cup water(400 ml)

1/2 Tsp cumin (Jeera )

1/2 Tbsp sodium bicarbonate(papadam soda /papad soda)

salt as per taste

Heavy bottomed pan/ kadai/ bamboo steamer to steam and cook the dumplings.

METHOD

sieve all purpose flour and add cumin and salt to it and mix it well. Now in a pan add water and let it boil well, once you see the bubbles in the water add sodium bicarbonate to it and let water boil for another 3 to 4 mins and off the flame. Now add the water to all purpose flour and mix it well with the spoon.

Now take a heavy bottomed pan and fill it with water  and place the ring if you’re using kadai or heavy bottomed pan (  Ring is placed so that water doesn’t get in the plate of dumpling) and boil the water in medium flame. In the meanwhile take the plate in which you are going to steam the dumplings and grease  it with oil, then take a bowl filled with normal water. Now wet your palm with the water and take a little portion of the mixed flour and make small flat balls with it and then place it in the greased plate. Repeat the same with the rest of the mixed flour. By this time water in the pan must have got boiled and now you can place the plate with the round flat dumplings on the ring and close it with the lid. Steam it on a medium flame for about 20 to 25 mins. After 25mins insert the knife in the dumpling which is at the centre of the plate, if the knife comes out clean then dumplings are ready.

Now once the Dumplings are ready take a little portion (Big lemon sized ball ) of the dumpling and close the lid again and mash it well with the hand and making it into ball and roll it into circle like how you make chapati but be sure to grease the board on which you’re going to roll and don’t roll it to too thin nor too thick ( the the thickness should be medium) and place it on the plastic sheet or butter paper. Repeat the same with the rest of the dumplings place them along with sheet in the sunlight to dry. Once they are dried you can store them in the air tight container for about 6 to 7 months and just roast it or fry it whenever you want to eat it.

Tip

You can also use puri press to make these khichiya.

Khichiya can also be served similar to that of masala papad. Roast the khichiya and add chopped onion, tomato and coriander and serve it.
