Toast with Paneer and cheese

Strictly for cheese Lovers… 😉

 

INGREDIENTS

1 cup crumbled Cottage cheese ( Paneer)

1/4 cup approx of very finely chopped red onions

2 green chilies, chopped finely (or as per taste)

2 cloves of garlic, finely minced (or as per taste)

1/2 cup fresh mozzarella, crumbled (or use grated mozzarella)

1/2 cup tomatoes, finely chopped

1 inch ginger grated

Few springs of coriander, chopped

salt to taste

Black Pepper

Oregano

Chili Flakes ( Optional )

Bread slices

Ketchup

Grated Mozzarella or emmental cheese

METHOD

In a pan heat the 1 tsp oil, then add all the ingredients together except the cheese. Saute until soft( taste and Change the seasoning according to your taste). Once they are soft remove from heat and add fresh mozzarella along with coriander ( cilantro). Mix until well mixed.

Take the bread slices and spread the ketchup on each slice on one side and sprinkle the grated mozzarella cheese and then add the mixture on the top and then finally grated Mozzarella ( or emmental cheese) on the top one more time.

Place the slices in the baking tray, lined with baking paper and put the tray inside the preheated oven until the cheese has melted and the bread looks golden brown from the corners.

Remove it from the oven and serve it hot.. 🙂

Stuffed Bread/Sour Dough

INGREDIENTS

For Dough

500 g flour

7 g salt

7 g dried yeast

320 g warm water

1 Tbsp  olive oil

For Filling

5 to 6 Olives chopped

Grated cheese 5 to 6 Tbsp (Optional )

Black pepper ( as per taste)

Thyme

1/2 bowl of chopped Capsicum

Chili Flakes ( optional )

METHOD

Mix all the ingredients of dough and knead it well for 10 mins until you get soft, stretchy and velvety dough. Now place the dough in a big bowl and cover it and rest it for 2 to  4 hours at room temperature.( you have to take big bowl since the dough will double as you have the yeast.) or you can store it overnight in the fridge and  use it next day.

Preheat the oven for 30 mins at max temperature before baking. In the mean while divide the dough into small equal size balls.. and let it rest for another 10 mins on the counter. In the mean while mix all the ingredients mentioned under filling in a bowl and keep it aside. After 10 mins take one of the dough ball and roll it in the circle or oval shape as you like.. making sure the  center of the dough is little thicker than the edges so that it would be easy to fill in and close the stuffed ball breads..

Once you have rolled the dough, take a spoon or half a spoon of filling depending on the size of the dough u have rolled ( Do not fill in lot of stuffing otherwise when you bake the bread would break open). Gather all the sides of the dough and bring it to center in a such a way that the dough is now like ball in shape then just give one twist and press the corners at the center making the ball closed. Repeat the same with the rest of the dough and place them on a baking sheet in a baking tray and bake them until they are golden brown in color. Serve them hot with dips of your choice.. I love it with sour cream 🙂

Khumb Tukda

“Give it a munch and hear the crunch”

INGREDIENTS

4 slices bread,  lightly toasted.

a little butter(optional)

1 tbsp olive oil.

1 clove garlic finely chopped.

Green chilies,  finely chopped ( As per taste )

7-8 basil (or tulsi)  leaves, finely chopped.

1 capsicum,  cut in julienne

50 gm Cheese  grated.

Salt and pepper ( As per taste  )

METHOD

Butter the pieces of toast evenly(if you are using butter). Put the oil in a microwave safe glass dish and pre-heat for two minutes. Tip in the garlic and cook for about 2 mins. Then add capsicum and chilli and cook for another 3 mins.Remove from microwave and add in the rest of the ingredients.  Check seasoning. Pile onto the toasts,  top with cheese and grill on a tawa for 2 to 3 minutes or till the cheese melts,  Cut the toasts into bite-size pieces and serve hot with ketchup.
