Pan con Tomatillo (Spanish Tart )

This Spanish tart is made from Ciabatta Bread. Its a Italian white bread made from wheat flour,water , salt and yeast. Now a days they use all purpose flour also instead of wheat. I bought ciabatta from local store in the bread section. If you don’t find ciabatta, you can also get any French loaf/ Baguette and cut it into 3 cm thickness,  so that it doesn’t get soggy. I came across this recipe when we had been to Spain for our vacation. This is very simple dish with the combination of tomatoes, olive oil & toasted bread. You have to make sure the bread is really crisped though, to get the ultimate taste of it. 🙂


Ciabatta Bread

4 –  deseeded and chopped tomatoes

Olive oil

bruschetta dip mix


black pepper

Green Tomatoes ( Optional )


Pinch of sugar

Add Oil, salt and sugar to chopped tomatoes and keep it aside for at least 4 hours. Tossing them occasionally ( You can also make this  ahead and store it in the fridge). When its time to serve, add the herbs and pepper to it and mix well and keep it aside for 30 mins. In the  mean while cut the bread  slices, pour little olive oil on the breads and rub them to each other in the front and back  and place them in the pre-heated oven underlined with the butter paper or baking sheet. When you see the bread is light brown in color take them out.  Take a spoon and add the chopped tomatoes to the bread leaving the water behind from the tomatoes. Repeat the same with the rest of the slices.

In the final step just pour few drops of tomatoes water on the bread and top it with Jalapenos and serve them.

You can also use flavored olive oil and Cheese spread as a base to make it more tastier.


Toast with Paneer and cheese

Strictly for cheese Lovers… 😉



1 cup crumbled Cottage cheese ( Paneer)

1/4 cup approx of very finely chopped red onions

2 green chilies, chopped finely (or as per taste)

2 cloves of garlic, finely minced (or as per taste)

1/2 cup fresh mozzarella, crumbled (or use grated mozzarella)

1/2 cup tomatoes, finely chopped

1 inch ginger grated

Few springs of coriander, chopped

salt to taste

Black Pepper


Chili Flakes ( Optional )

Bread slices


Grated Mozzarella or emmental cheese

In a pan heat the 1 tsp oil, then add all the ingredients together except the cheese. Saute until soft( taste and Change the seasoning according to your taste). Once they are soft remove from heat and add fresh mozzarella along with coriander ( cilantro). Mix until well mixed.

Take the bread slices and spread the ketchup on each slice on one side and sprinkle the grated mozzarella cheese and then add the mixture on the top and then finally grated Mozzarella ( or emmental cheese) on the top one more time.

Place the slices in the baking tray, lined with baking paper and put the tray inside the preheated oven until the cheese has melted and the bread looks golden brown from the corners.

Remove it from the oven and serve it hot.. 🙂

Khumb Tukda

“Give it a munch and hear the crunch”


4 slices bread,  lightly toasted.

a little butter(optional)

1 tbsp olive oil.

1 clove garlic finely chopped.

Green chilies,  finely chopped ( As per taste )

7-8 basil (or tulsi)  leaves, finely chopped.

1 capsicum,  cut in julienne

50 gm Cheese  grated.

Salt and pepper ( As per taste  )


Khumb Tukda

Butter the pieces of toast evenly(if you are using butter). Put the oil in a microwave safe glass dish and pre-heat for two minutes. Tip in the garlic and cook for about 2 mins. Then add capsicum and chilli and cook for another 3 mins.Remove from microwave and add in the rest of the ingredients.  Check seasoning. Pile onto the toasts,  top with cheese and grill on a tawa for 2 to 3 minutes or till the cheese melts,  Cut the toasts into bite-size pieces and serve hot with ketchup.

Hung Curd Toast


Bread 4-6 slices (without the brown part)

Hung curd  1 cup

Ginger paste 1/2 or 1 tsp

Chopped green chilies 2-3

Besan (gram flour ) 2 Tbsp

Sooji (Semolina) 2 Tbsp

Butter normal one or garlic flavored

Salt & Pepper as per taste


Mix all the above ingredients other than bread and butter in a bowl. Give a quick stir, so that all the flavors blend well in curd. Now take a bread slice and on one-side of the  bread apply the butter and on other side the prepared mixture of curd. Roast both side until its golden brown in color. Now its ready to serve.Serve it hot with ketchup, mint chutney, tea, coffee anything.

Note: you can also add onions if you like. The curd mixture must be tight. So in order to adjust the consistency of the mixture you can add more/less besan ( gram flour ) according to your hung curd.
